Kong-guksu (Soy Milk Noodle Soup)

Instructions

Soak the soybeans and wash them clean.

Put the soaked soybeans in a pot and pour in plenty of water.

Boil the soybeans over high heat for 5 minutes, then reduce to medium heat and boil slowly for 30 minutes.

Simmer over low heat for 15 minutes.

Turn off the heat and rinse the soybeans in cold water.

Pour the boiled soybeans into a colander.

Put the soybeans into a large basin and rub them gently to remove the skins.

Rinse three or four times until no more soybean skins come out.

Put the washed soybeans into a blender.

Pour the water used to boil and strain the soybeans into the blender.

Add 5 tbsp of cashews.

Add 3 tbsp of roasted sesame seeds.

Add 0.5 tbsp of roasted salt.

Blend the soy mixture until smooth.

Pour water into a pot and bring to a boil.

Add the noodles and boil.

When the noodles boil up, add cold water while continuing to boil.

When the noodles are cooked, turn off the heat, rinse in cold water, and drain.

Place the noodles in a bowl and pour the soy milk over them.

Top with sliced cherry tomatoes and cucumber to finish.
