Thai-style Spinach and Minced Pork Rice Bowl

A popular Thai-style spinach rice bowl recipe introduced on the SBS show 'Delicious Rendezvous' (Namhae edition).

What You'll Need

Spinach150g
Minced pork250g (1 and 2/3 cups)
Cooking oil70g (½ cup)
Cheongyang chili pepper30g (4 peppers)
Red chili pepper15g (1 pepper)
Garlic25g (4 cloves)
Sugar15g (1 and 1/2 tbsp)
Oyster sauce10g (1 tbsp)
Anchovy fish sauce10g (1 tbsp)
Dark soy sauce5g (1/2 tbsp)
Dark soy sauce (Lao Chou)10g (1 tbsp)

Rice200g (1 bowl)

Instructions

Finely mince the garlic, Cheongyang chili peppers, and red chili pepper on a cutting board.

Wash the spinach thoroughly, then finely chop the root ends and cut the leaves into bite-sized pieces.

Heat plenty of cooking oil in a pan and add the minced garlic, Cheongyang chili peppers, and red chili pepper, stir-frying until the aroma is fully released.

Add the minced pork to the pan and stir-fry, breaking it up with a knife or spatula to prevent clumping.

Once the pork is fully cooked and white, add the sugar and dark soy sauce, stir-frying until it has a slightly caramelized, seared quality.

Add the oyster sauce, anchovy fish sauce, and dark soy sauce (Lao Chou) to the pan in order and stir well to season.

Add the prepared spinach to the pan and stir-fry until wilted so the oil and seasoning are well incorporated.

Once the spinach is fully wilted and the stir-fried meat sauce is moist, turn off the heat.

In a separate pan, heat cooking oil and fry the egg until crispy.

Place 1 bowl of rice in a serving dish, top with the finished Thai-style spinach and meat stir-fry and the fried egg to finish.
