Pork Yukjeon (Pan-Fried Pork)

A popular recipe for Yukjeon made with moist and tender pork loin, served with an addictive dipping sauce.

Instructions

Finely mince 1 Cheongyang chili pepper and place it in a dipping sauce bowl.

Finely slice and mince 1/2 an onion, add it to the dipping sauce bowl, and stir well.

Add 1/2 tbsp of sugar, 1 level tbsp of red chili powder, and 3.5 tbsp of Jin-ganjang.

Add 1 tbsp of vinegar to enhance the flavor.

Add about 1.5cm of mustard and 1 tbsp of water, then stir well.

Crack 3 eggs, separate the yolks, and place only the yolks in a bowl.

Add a pinch of salt to the eggs and beat well.

Add exactly two drops of sesame oil to remove the egg smell and add a nutty aroma.

Pour half of the flour onto a tray.

Remove moisture from 300g of pork loin using a paper towel.

Place the pork loin on a cutting board and pound both sides thoroughly with the back of a knife to tenderize.

Season the tenderized pork loin with 1/3 tbsp of salt and two pinches of pepper.

Lightly coat the seasoned meat with flour and shake off any excess.

Heat oil in a pan, coat the floured meat evenly with the egg mixture, and place it in the pan.

Fry over low heat until golden brown and delicious.
