Peel the pear and use a grater to squeeze out the pear juice.
Use a knife to julienne the radish, following the grain.
Cut the chives into 2-3cm lengths.
Add 2 tbsp of red chili powder to the julienned radish and toss evenly to coat with a red color.
Add 1 tsp of sugar and toss with the radish to add sweetness.
Finely mince 1.5 tbsp of salted shrimp with a knife and add to the radish.
Sprinkle 1/2 tbsp of salt (or salt of your choice) evenly to season.
Add 1 tbsp of minced garlic and 1 tsp of minced ginger.
Add the cut chives and toss everything by hand until well combined.
Finally, sprinkle with 1/2 tbsp of whole sesame seeds to finish.
