Instructions

Trim the glass noodles to 6cm, soak in water to soften, boil, and season with oil and soy sauce.

Remove the tails of the bean sprouts, blanch them slightly, and season with oil and soy sauce.

Rub the cucumber with salt to clean the bumps, cut into 6cm lengths, peel in a spiral, slice into 0.3cm thick strips, and pickle in salt.

Cut the carrot into 6cm long, 0.3cm thick strips and pickle in salt.

Remove the stems from the shiitake and wood ear mushrooms, then slice or prepare them.

Slice the onion into 6cm long, 0.3cm thick strips.

Strain the egg yolks and whites through a fine mesh, fry into thin sheets, and cut into 5cm strips.

Remove fat from the meat, shape into a rectangle, and slice into 0.3cm thick strips.

Finely mince the green onion and garlic to prepare the seasoning sauce.

Heat oil in a pan and stir-fry the onion, bellflower root, cucumber, shiitake, wood ear mushrooms, carrot, meat, and bean sprouts in order.

Add the seasoned glass noodles to the pan and stir-fry with the seasoning sauce including soy sauce, sugar, and sesame oil.

Mix all prepared ingredients with the stir-fried glass noodles, toss together, and serve on a plate.
