Easy Deodeok Salad

A simple and delicious way to prepare fragrant deodeok (lance asiabell) using two types of seasonings: an oil-based sauce and a soy-based sauce.

Peeled deodeok400g
Salt1 tbsp
Minced green onion1 tbsp
Minced garlic1 tsp
Guk-ganjang (soup soy sauce)1 tsp
Sesame oil1 tbsp
Perilla seed powder1 tbsp
Toasted sesame seedsa little
Gochujang (red chili paste)1 tbsp
Soy sauce1/2 tbsp
Starch syrup1 1/2 tbsp
Minced garlic1 tsp

Instructions

Pour water into a bowl, add salt to dissolve, then roast coarse sea salt and grind it finely to prepare the salt water.

Wash the peeled deodeok thoroughly, then soak it in the salt water for about 10 minutes to remove bitterness and retain moisture.

Remove the peeled deodeok from the salt water and slice it into bite-sized strips.

Place half of the sliced deodeok in a bowl, add minced green onion, minced garlic, soup soy sauce, sesame oil, and a little salt, then toss gently.

Add perilla seed powder and toasted sesame seeds to the deodeok seasoned with the oil-based sauce, and mix well to complete the first salad.

In a separate bowl, mix gochujang, soy sauce, sesame oil, starch syrup, minced green onion, and minced garlic to make the soy-based sauce.

Add the remaining sliced deodeok to the soy-based sauce and mix well by rubbing gently with your hands.

Taste the deodeok seasoned with the soy-based sauce and add salt if necessary to adjust the seasoning.

Add toasted sesame seeds and perilla seed powder to the soy-based salad and toss lightly to finish.
