Kimchi Jjim (Braised Kimchi)

A spicy and rich kimchi stew recipe made by slow-cooking whole aged kimchi and pork front leg meat for a deep flavor.

What You'll Need

Store-bought aged kimchi500g
Kimchi brinea little
Pork front leg meat500g
Cooking oilappropriate amount

Green onion2~3 stalks
Whole garlica handful
Anchovy fish sauce2 tbsp
Soy sauce1 tbsp
Sugar1 level tbsp
Minced garlic1 heaping tbsp

Instructions

Pour 2 swirls of cooking oil into a heated pot, add the 500g piece of pork front leg meat, and sear both sides until golden brown.

Reduce the heat to medium and season the seared 500g pork front leg meat with 1 pinch of salt.

Lay 500g of store-bought aged kimchi in the pot and add a little kimchi brine.

Pour in 1L of water, then add 2~3 stalks of green onion cut into long pieces similar to the size of the kimchi, and a handful of whole garlic.

Season with 2 tbsp of anchovy fish sauce, 1 tbsp of soy sauce, and 1 level tbsp of sugar.

Add 1 heaping tbsp of minced garlic, cover with a lid, and simmer over medium heat for 50 minutes.

Open the lid, check that the minced garlic and aged kimchi are tenderly cooked, and finish.
