Instructions

Soak the oxtail in water for at least 30 minutes up to 2 hours to remove the blood.

Boil water in a pot, add the blood-drained oxtail, and blanch for 5 to 10 minutes.

Remove the blanched oxtail and rinse thoroughly in cold water to remove impurities.

Place the cleaned oxtail into a 10-serving pressure cooker.

Put water, radish, onion, green onion, bay leaves, garlic, whole black pepper, and dried chili into a broth bag and add it to the pot.

Add sugar, soy sauce, cooking wine (Mirin), and dark soy sauce.

Add 1 bottle of Ssanghwa-tang to the pressure cooker.

Close the pressure cooker lid, bring to a boil over high heat, and once it starts whistling, cook for 30 minutes.

Release the steam from the pressure cooker, open the lid, and add side ingredients like potatoes, sweet potatoes, carrots, mushrooms, onions, and green onions to your taste.

Stir well, taste, and simmer for another 5 to 10 minutes to finish.
