Seasoned Dried Pollack

A delicious recipe for seasoned dried pollack that is soft and moist without stir-frying.

What You'll Need

Dried pollack strips210g
Kelp and anchovy stock150mL
Chivesa little
Mirin3 tbsp
Sesame oil3 tbsp
Minced garlic1 tbsp
Gochujang2 tbsp
Red chili powder1 tbsp
Grain syrup3 tbsp
Soy sauce2 tbsp
Tuna sauce2 tbsp
Sesame seedssprinkled

Instructions

Tear the wide dried pollack strips by hand and shred them finely.

Place the prepared dried pollack strips in a bowl.

Pour in the kelp and anchovy stock and massage by hand so the pollack strips become moist.

Add 3 tablespoons of mirin (or cooking wine/cheongju) and massage until moist.

When the pan is warm, reduce to low heat, add the moistened pollack strips, and lightly evaporate the excess moisture.

Turn off the heat, remove the pollack strips, and taste the seasoning in the pan.

Put the pollack strips back into the bowl and toss gently with the seasoning.

Finally, add another tablespoon of sesame oil and sprinkle with whole sesame seeds.

Sprinkle with chopped chives to finish.
