What You'll Need

Dried yellow pollack for seasoning70g
Cucumber2
Cooking wine4 tbsp
Flower salt0.5 tbsp
White sugar4 tbsp
Regular vinegar2 tbsp
Gochujang (red chili paste)2 tbsp
Red chili powder2 tbsp
Plum extract2 tbsp
Dark/Brewed soy sauce1 tbsp
Tuna sauce1 tbsp
Double-strength vinegar2 tbsp
Oligosaccharide1 tbsp
Whole sesame seeds1 tbsp

Instructions

Cut the dried yellow pollack for seasoning into bite-sized pieces.

Evenly sprinkle cooking wine over the prepared yellow pollack and let it soak to keep it moist.

Split the cucumber in half, remove the seeds, and slice it into shapes similar to the yellow pollack.

Add flower salt, white sugar, and regular vinegar to the sliced cucumber, mix evenly, and let it pickle for 15 to 20 minutes to drain the moisture.

Squeeze the moisture out of the pickled cucumber and set aside.

Make the seasoning sauce by mixing gochujang, red chili powder, plum extract, dark/brewed soy sauce, tuna sauce, double-strength vinegar, white sugar, and oligosaccharide.

Place the pickled cucumber in a bowl and mix it thoroughly with the seasoning sauce first.

Add the yellow pollack soaked in cooking wine and mix together so the seasoning is well absorbed.

Finally, sprinkle with whole sesame seeds to finish.
