Pork Belly Kimchi Jjim

A recipe for a deep and rich-flavored pork belly kimchi jjim that you can easily make at home.

What You'll Need

Soy sauce1 soju cup
Sugar1 soju cup
Doenjang (soybean paste)1/2 soju cup

Mirin1/2 soju cup
Anchovy fish sauce1/2 soju cup
Rice water1 beer glass
Pork belly blockAppropriate amount
Aged kimchi1 head
Onion1 piece
Cheongyang chili pepperAppropriate amount

Instructions

Add 1 soju cup of sugar into a bowl.

Add 1 soju cup of soy sauce into the bowl.

Add 1/2 soju cup of mirin into the bowl.

Add a pinch of salt into the bowl.

Add 1/2 soju cup of anchovy fish sauce into the bowl.

Add 1/2 soju cup of doenjang into the bowl.

Add 1 beer glass of rice water into the bowl to complete the seasoning sauce.

Place the pork belly block at the bottom of a pot.

Place sliced onions on top of the pork belly.

Place the aged kimchi, cut into bite-sized pieces, on top of the onions.

Pour the prepared seasoning sauce evenly over the aged kimchi.

Top the pot with green onions and Cheongyang chili peppers.

Cover with a lid and boil over high heat until it starts to bubble.

Once it starts to boil, reduce to low heat and simmer for 1 hour.
