Stir-fried Dried Squid Strips

A recipe for soft, sweet, and spicy stir-fried dried squid strips using Chef Kim Dae-seok's secret method.

What You'll Need

Dried squid strips250g
Mirin3 tbsp
Sugar1 tbsp
Cooking oil1 tbsp
Dark soy sauce2 tbsp
Gochujang2 tbsp
Red chili powder1 tbsp
Minced garlic1 tbsp
Starch syrup1 tbsp
Peanut butter1 tbsp
Sesame oil1 tbsp
Sesame seeds1 tbsp
Water3 tbsp

Instructions

In a bowl, add 250g of dried squid strips, 3 tbsp of mirin, and 1 tbsp of sugar, and mix evenly.

Place the dried squid strips in the microwave and heat for 1 minute.

Remove from the microwave, spread on a plate to cool slightly, and cut into bite-sized pieces with scissors.

In a pan, add 1 tbsp cooking oil, 2 tbsp dark soy sauce, 2 tbsp gochujang, 2 tbsp red chili powder, 1 tbsp minced garlic, 1 tbsp peanut butter, 1 tbsp sugar, and 3 tbsp water, then simmer over medium heat.

When the sauce boils, turn off the heat and stir in 1 tbsp of starch syrup.

Add the prepared dried squid strips to the sauce in the pan and stir-fry evenly using the residual heat.

Add 1 tbsp sesame oil and 1 tbsp sesame seeds, mix lightly, and finish.
