Dried pollack1 whole
Cooking oilas needed
Sweet rice flouras needed

Instructions

Cut off the head and tail of the dried pollack, then cut it straight into bite-sized pieces.

Do not soak the pollack in running water; rinse it quickly and then moisten it thoroughly.

To remove the fishy smell, add ingredients like vinegar or rice-washed water and let it sit for 10 minutes.

In a bowl, mix soy sauce, cooking wine, perilla oil, and black pepper to make the base seasoning.

Grate ginger to extract juice, and squeeze it using a cloth or strainer.

Mix gochujang, red chili powder, soy sauce, perilla oil, sugar, starch syrup, and ginger juice to make the gochujang sauce.

Trim the fins and bones of the soaked pollack with scissors, and remove any embedded bones from the flesh.
