Instructions

Soak the beef shin in cold water for at least 1 to 1.5 hours to draw out the blood.

Bring a pot of water to a boil and add the soaked beef shin, green onion, whole garlic, bay leaves, whole black peppercorns, and soju.

Boil uncovered over high heat for 20 minutes to remove the gamey smell.

Add the cabbage leaves, reduce the heat to medium-low, cover partially with the lid, and boil for another 40 minutes.

Turn off the heat, cover completely with the lid, and let it rest for 10 minutes.

Place the boiled beef shin in ice water for 3 minutes to firm up the surface.

Remove the meat, place it on a cutting board, and slice it thinly to show a beautiful cross-section.

In a bowl, mix the fine red chili powder, brewed soy sauce, tsuyu, apple vinegar, sugar, yellow mustard, minced garlic, sesame oil, and sesame seeds to make the dressing.
