Conger Eel Soup (Gaejang-eo-tang)

A healthy eel soup made by extracting the flesh of the conger eel and simmering it with dried radish greens.

What You'll Need

Conger eel2.5 fish
Dried radish greens (siraegi)250g
Green onion130g
Doenjang (soybean paste)3 tbsp
Garlic2 tbsp
Cheongyang chili pepper4 peppers
Red chili powder4 tbsp

Cooking wine200cc
Soup soy sauce20cc

Instructions

Rub the conger eel with coarse salt to remove the slime, then clean it by removing the internal organs.

Cut the cleaned conger eel into pieces, place them in boiling water, and boil thoroughly.

When the eel starts to boil, add the ginger and cooking wine.

Once the eel is fully cooked, remove the thick bones.

Place in a sieve and mash to extract only the eel flesh.

Put the extracted eel flesh into a blender and blend until smooth to make the broth.

Mix the dried radish greens with doenjang, Cheongyang chili peppers, garlic, and red chili powder.

Add the seasoned dried radish greens to the eel broth and boil.

When the soup boils, season with soup soy sauce and finish by adding sliced green onions.
