What You'll Need

Pork belly600~700g
Dark soy sauce1 paper cup
Brown sugar1 paper cup
Water8 cups
Ginger1 thumb-sized piece
Whole garlic1 handful
Green onion1 stalk
Onion1 piece
Bay leaves5 leaves
MSG (Miwon)1/2 tbsp
Matdasi (seasoning paste)1 tbsp
Black pepper1/3 tbsp
Premium dark soy sauce (Nochu)1~2 tbsp

Instructions

Cut the pork belly into pieces about two finger-widths thick, preferably no more than three finger-widths.

Turn on the portable stove and place the pot on it.

Add 1 paper cup of dark soy sauce to the pot.

Add 1 paper cup of brown sugar, microwave for 30 seconds until melted, and pour into the pot.

Add 8 cups of water to the pot.

Add the ginger (1 thumb-sized piece), whole garlic (1 handful), green onion (1 stalk), and onion (1 piece) to the pot.

Add 5 bay leaves.

Add 1/2 tbsp of MSG.

Add 1 tbsp of Matdasi.

Add a generous 1/3 tbsp of black pepper.

Add 1-2 tbsp of premium dark soy sauce to give the pork a deep color.

Submerge the prepared pork belly into the pot.

Cover the pot with the lid.

Set a timer for 30 minutes and boil over high heat.
