Aged Kimchi and Monkfish Soup

What You'll Need

Monkfish1 small fish
Aged kimchiAppropriate amount
Aged kimchi brineAppropriate amount
Green onion1 stalk
Beef Dashida1 tbsp
Minced garlic1 tbsp
MSG1/2 tbsp (optional)
Red chili powder1 tbsp (optional)

Instructions

Start by putting only water and aged kimchi into a pot and bringing it to a boil.

Boil for about 1 minute until the aged kimchi starts to boil.

Add the prepared monkfish to the pot, cover, and boil.

Boil without opening the lid until the monkfish is cooked.

Cut the green onion into appropriate sizes.

Add 1 tbsp of beef Dashida to season.

Add 1 tbsp of minced garlic and boil.

Add a little more beef Dashida or MSG according to your preference.

Add the sliced green onion and a little aged kimchi brine to finish boiling.
