Instructions

Wash the cleaned eel with sun-dried salt, then boil it in water with about half a cup of refined rice wine and a little turmeric powder to remove any fishy or gamey odors.

Prepare seasonal greens like fern, napa cabbage, and butterbur by cutting them into similar lengths.

Once the boiled eel has cooled slightly, remove it and separate the meat from the bones.

Boil the remaining bones and head again to create a milky, rich broth.

Before adding the prepared greens to the broth, toss them with half of the seasoning soy sauce so they become tender and absorb some flavor, which improves the overall taste.

Add the vegetables and the prepared eel meat to the broth and boil to finish the eel soup.
