Instructions

Wash the water dropwort in advance, soak it in vinegar water, then remove and wash all the vegetables.

Cut the radish into appropriate sizes and score it with a knife so it cooks through easily when boiled in the soup.

Clean the skate and separate the wings on both sides.

Set aside the wing meat for sashimi, and prepare the center body, tail, and head for the soup.

Add water to a pot, add the radish first, then add the soybean paste and red chili powder and bring to a boil.

Once boiling, add the prepared skate body, bones, and innards and boil vigorously.

Add garlic, ginger, soju, and beef Dashida, adjusting the seasoning while continuing to boil.

Slice the onion, Cheongyang chili peppers, and green onions and add them to the soup.

Finally, add plenty of water dropwort or chives, boil briefly, and serve like a fresh salad (geotjeori) side dish.
