Jeju-style Fresh Hairtail Soup

A local Jeju Island hairtail soup recipe made with fresh hairtail, Joseon pumpkin, and outer cabbage leaves for a refreshing taste.

What You'll Need

Hairtail2-3 fresh fish
Joseon pumpkin1/2
Outer cabbage leavesa handful
Radish1 cup
Green onion2 stalks
Red chili pepper1
Cheongyang chili pepper3
Garlic3-4 cloves
Soup soy sauce1 tbsp
Cheongju (refined rice wine)2 tbsp
Salt1 tsp
Rice-washed water8 cups

Instructions

Scrape the silver scales off the cut hairtail with a knife.

Slice the radish into thin rectangles, slice the garlic, chop the red and Cheongyang chili peppers, slice the green onions diagonally, and cut the Joseon pumpkin into thick chunks.

In a pot, add the rice-washed water, sliced radish, and sliced garlic, and boil over high heat for 300 seconds until the radish is slightly cooked.

Add the prepared hairtail and Joseon pumpkin and boil for 240 seconds.

Add the cheongju and soup soy sauce, taste, and adjust seasoning with salt if needed.

Add the outer cabbage leaves, red chili pepper, and Cheongyang chili peppers, boil for about 60 seconds more, then turn off the heat.
