First, remove the blood from the beef shank with a paper towel and soak it in water for about 30 minutes to completely remove the blood.

If you want to remove the blood faster, add 1 tbsp of sugar to the water.

Prepare the water to boil the beef shank in a pot and add one bunch of green onion, 4 cloves of garlic, and half an onion.

To increase the umami and remove the onion's odor, char it with a torch before adding it to the water.

If you don't have a torch, you can preheat a dry pan, place the vegetables on it, and char the surface.

Add a little soy sauce to about 2L of prepared water.

Place the blood-drained beef shank into the pot and boil for at least 30 minutes.
