Place the trimmed fish in a steamer, cover, and steam over high heat for 15 minutes.

In a bowl, mix 60cc of dark soy sauce, 5cc of sesame oil, and 15cc of cooking wine.

Add 1 tbsp of garlic and 1 tbsp of pepper to the soy sauce mixture and stir well to make the sauce.

Evenly brush the prepared sauce over the fish that has been steamed for 15 minutes.

Place the sauced fish back into the steamer and steam for another 5 minutes.
