Place the kombu in a pot, add water, and boil to make a dashi broth.

Peel the radish and grate it using a grater to prepare oroshi (grated radish).

Finely chop the green onion.

Prepare an appropriate amount of wasabi.

Remove the kombu from the boiled dashi, then add soy sauce, sugar, mirin, and cheongju to make the tsuyu sauce.

Boil water in a pot and cook the buckwheat noodles.

Rinse the cooked noodles in cold water to remove starch, then place them on a sieve and shape them.

Thinly slice the dried seaweed.

Serve the finished buckwheat noodles with the tsuyu, oroshi, wasabi, green onion, and seaweed on the side.
