Instructions

Grind the sesame seeds and prepare.

Boil the mirin and sake to evaporate the alcohol and add sweetness.

Mix the ground sesame seeds with atari goma, the boiled mirin/sake, soy sauce, ginger, and sugar to complete the sesame sauce.

Bring the pre-made katsuobushi dashi broth to a boil.

Add kombu and katsuobushi to the boiling broth to finish the rich stock.

Adjust the seasoning and flavor of the broth with katsuobushi and sun-dried salt.

Thinly slice or julienne the green onion, shiso, and nori for toppings.

Slice the aged sea bream into appropriate thicknesses.

Place rice in a bowl, top with the sliced sea bream, and garnish with the prepared green onion, shiso, nori, wasabi, and sesame sauce.

Pour the hot broth over the rice and sea bream to eat.
