Instructions

Pour a generous amount of olive oil into a high-sided pot and start sautéing the minced meat (1kg pork salsiccia, 1.5kg beef).

Add 4-5 bay leaves and sauté until the moisture from the meat evaporates to induce the Maillard reaction.

Add half a bottle of Italian red wine and boil over high heat to evaporate all the alcohol.

Add pre-chopped onions and sauté.

Add the large can of tomatoes (2.5kg), salt, and pepper to season and mix.

Tear in plenty of fresh basil and simmer the sauce.

Cook the sauce in an oven at about 180 degrees for 4 hours to complete the ragu sauce.

In a separate stainless steel pot, melt the butter, add the flour, and sauté over low heat.

Add a full amount of milk and stir while boiling until it becomes a liquid butter consistency to make the béchamel sauce.

Grate in the Parmigiano Reggiano cheese (120g), salt, and pepper to finish the béchamel sauce.

In a heat-resistant glass oven dish, lay down a layer of lasagna noodles, then layer the ragu sauce, béchamel sauce, and mozzarella cheese in order.

Repeat the process to build the layers, then place the lasagna in the oven and bake until golden brown.
