Super Simple Potato Pancake

This is Chef Kim Dae-seok's super simple potato pancake recipe. Grate potatoes and onions, mix with starch, and fry until chewy and crispy.

Slowly grate 3 potatoes (450g) using a grater.

Pour the grated potatoes into a mixing bowl.

Grate 1/6 of an onion using a grater.

Add the grated onion to the mixing bowl and stir quickly to mix with the potatoes.

Place a sieve over a cold noodle bowl and pour the grated potato and onion mixture into it.

Press down on the potatoes and wait for 10 minutes so that starch settles at the bottom.

Thinly slice half of a Cheongyang chili pepper.

In a bowl, mix 1 tbsp of soy sauce, 1 tbsp of water, 1 tbsp of vinegar, 1 pinch of raw sugar, and the sliced chili pepper to make the dipping sauce.

After 10 minutes, pour off the potato water, leaving only the starch that has settled at the bottom.

Mix the remaining potato solids back into the starch to form the pancake batter.

Add 1/4 tsp of salt to the batter and mix well.

Drizzle cooking oil twice around the pan and turn on the heat.

Once the oil is evenly distributed, scoop the batter by the spoonful and fry.

When it is golden brown, flip it over.

Place the golden-brown potato pancakes on a plate to serve.
