Pork Loin Jeon (Pan-fried Pork)

A recipe for meat pancakes (jeon) using pork loin, which is more tender and cost-effective than beef jeon.

What You'll Need

Pork loin300g
Eggs4

Whole garlic3 cloves
Ginger1/3 the amount of garlic
Flour1/2 cup
Dry glutinous rice flour1/2 cup

Soup soy sauce1/2 tbsp
Dark/Brewed soy sauce1/2 tbsp
Brown sugar1 tbsp
Sesame oil1 tbsp

Instructions

Slice the pork loin thinly to about 3-4mm thickness.

Mince the whole garlic, and mince ginger in an amount equal to one-third of the garlic.

In a bowl, mix soup soy sauce, dark soy sauce, brown sugar, sesame oil, minced garlic, and ginger to make the seasoning sauce.

Add a little salt to beaten eggs, dip the meat briefly to coat, then remove to drain blood and moisture.

Lay the pork slices on a plate and use a brush to apply the seasoning sauce evenly for marinating.

Beat 4 eggs with a little salt to create an egg wash.

Prepare the flour mixture by combining 1/2 cup each of flour and dry glutinous rice flour.

Heat a frying pan, set the heat to the lowest setting, and add a generous amount of cooking oil.

Coat the marinated pork with the flour mixture, shake off the excess, and place in the frying pan.

Once the bottom of the meat is sufficiently cooked, flip it over and pan-fry until golden brown.
