1

Prepare 520g of pork loin and evenly sprinkle about 3 tablespoons of ginger cooking wine over it to remove any gamey odor.

Place the pork on paper towels and press down firmly to remove moisture.

3

Flatten and thin out the moisture-removed pork.

4

Lightly brush with sesame oil and sprinkle a little fine salt, sea salt, or table salt.

5

Sprinkle a little pepper as well.

6

Lightly coat with about 3 tablespoons of flour, spread it evenly, and shake off any excess.

7

Whisk 5 to 6 eggs.

8

Trim the green onion and red chili pepper and slice them nicely for garnish.

9

Prepare the dipping sauce by mixing dark soy sauce, plum extract, minced garlic, vinegar, and sesame seeds.

10

Once the pan is heated, reduce the heat to low, add a generous amount of oil, and spread it evenly.

11

Coat the meat in the egg wash, place it in the pan, and pan-fry it slowly over low heat.

12

Flip it once, and remove it from the pan as soon as it turns golden brown.
